Each batch of salami requires daily supervision and timing to ensure the perfect taste and consistency. Check our ingredients! Our fresh, natural pork comes from a producer that guarantees vegetarian fed, crate free animals. No hormones or antibiotics are used. We only use the finest spices from a local supplier, Spice of Life and imported Italian paprika. Local wines from Paso Robles and imported from Italy add distinctive flavors. No artificial nitrates or nitrites are used, only naturally occurring preservatives found in swiss chard.

Salami al Tartufo is made with black summer truffles and white truffle oil and is considered a treat for special occasions. It has a rich, earthy flavor. 6 ounces.

Alle-Pia introduces their newest artisan salami - Nostrano. This traditionally made salami uses the finest quality pork thigh meat. It is hand tied in 1" increments along the entire length to maintain the shape during the curing period. The name Nostrano means "Our Own" in Italian, and is made with our own recipe in the Piemontese style of "felino" salami, made in the northern Italian town of Felino.
Nostrano is mild in flavor and features white wine and coarse black pepper. Nostrano salami are larger and wrapped in brown paper with a cream colored label. Our customers at our local Farmers Markets love it!

This salami's fresh flavor comes from juniper berries and Chianti wine from Italy. It has a lighter taste than the other varieties.
Salami Cacciatore translates into "hunter's salami." It got this name because it is formed into small pieces about six or seven inches long, making them a simple and portable snack easily carried in a hunter's shoulder bag. Aromatic juniper berries impart a clear, refreshing flavor. 5 ounces

This bold salami gets flavor from traditional Chianti wine from Italy, crushed fennel seeds and black pepper. Finocchiona is undoubtedly one of the most loved among Tuscan pork products. Its name derives from "finnocchio", or fennel, with the crushed seeds added for enriched taste and aroma. 7 ounces

Salami with just a little kick! Locally produced Paso Robles Zinfandel wine and cayenne pepper add zesty flavor without being too hot or spicy. Bold enough to stand up with other strong flavors, but is not overpowering. Salami Sopressata got its name from the practice of pressing the salami between planks of wood resulting in a straight, flattened shape. The Northern Italian version did away with the pressed shape. Sopressa is known for having a more robust taste thanks to the amount of garlic and additional added spices like paprika and cayenne pepper. 7 ounces
